Mamdani Fuzzy Logic-Based Speed Control for Coffee Bean Drum Dryers

Abstract

The moisture content of coffee beans produced from the drying process using a drum dryer-based rotary system is highly dependent on the rotating speed of the drum and the time in the drying process. The drum rotation speed also affects the integrity of the coffee beans. In this study, a drum speed control mechanism was designed to maintain the moisture content of the coffee beans according to the standard, which is 11-12.5%. The drum speed control mechanism is designed using Fuzzy Logic Control (FLC) with Mamdani method to automatically adjust the speed of the motor based on the temperature inside the drum and the drying time measured in real-time. The results of the experiments show that the combination of the motor rotation speed of 25 RPM and the drying time of 90 minutes can produce coffee beans with a moisture content of 12%, which is the optimal number according to the Indonesian National Standard (SNI). On the other hand, the use of FLC can increase the efficiency in maintaining temperature stability compared to manual methods, thus reducing energy consumption by up to 15%. From these results, it is concluded that FLC Mamdani can be recommended as a reliable, effective, and efficient solution for drum dryer-based coffee bean drying systems and can be further scaled up for industrial-scale applications, especially for Micro, Small and Medium Enterprises (MSMEs). © 2025 IEEE.
