System for Determining the Rate of Roasting on Coffee Beans Using Fuzzy Logic

Abstract

The roasting process includes the process of removing the water in the coffee, drying and developing the beans, reducing the weight and giving the coffee its aroma. The taste of coffee can be varied according to taste, depending on how the roasting process is carried out. There are 3 classifications of coffee roasting, namely the classification of light, medium and dark. Each type of roasting classification has a different level of moisture content in the beans. So far, the determination of roasting maturity level is still done manually based on visual observations and requires a relatively long time, this study aims to make a detection tool for roasting maturity levels in coffee beans by utilizing the frequency value obtained from the RC oscillator. Changes in the value of the capacitor will affect the results of the measured frequency. To increase the accuracy of the classification, a color sensor is added to determine the color intensity of the coffee beans. The capacitance value and the value of the color sensor from each roasting classification are entered into fuzzy logic and are expected to be able to classify the type of roasting of coffee beans accurately. Based on the results of the research, the frequency of coffee beans with dark maturity has a frequency range of dark 104980 Hz, medium with values between 104210 Hz < medium < 104980 Hz and light 104210 Hz. For kawi coffee beans with membership range, dark > 104980 Hz, medium with a range of 101770 Hz < medium 102940 Hz and light 101770 Hz. While the color sensor in the fuzzy system testing for the dark maturity level has a membership value range, Dark 52, for medium with a range of 68 < medium 87 and light with a light range of 92. The fuzzy value of coffee beans has a value for dark 4, medium 5 and light 6. © 2022 IEEE.
